Recipe: Simple no-cook pasta sauce
Welcome back to Tuesday's recipe series, where each week I share a new recipe which you can download for free. When there is a collection on the blog, I will be showing you how to use them to create weekly, fortnightly and monthly meal plans. Today's recipe is a simple no-cook pasta sauce.
Well, thank goodness it's finally school holiday time, we were seriously dragging our feet towards the end of term. Why we chose to start another bedroom makeover with 3 weeks of school to go is beyond me (although is there really ever a 'good time' to start a house project?).
Our projects are always started with such enthusiasm, but once we're in the middle of the mayhem and mess, energy is definitely at a low point. There is also less time for household chores and less enthusiasm for preparing meals. Life will always bring with it those incredibly busy times, so it's great to have some super easy recipes in your meal planning arsenal.
This no-cook pasta sauce is the perfect solution for such times. With 7 simple ingredients - fresh herbs are key! - all you need to do is blitz them in a food processor, and pour over cooked pasta. My kids love filled pasta like tortellini and ravioli, so a simple sauce becomes a bit more of a substantial meal. You could also make this into a pasta bake by stirring it through some macaroni, sprinkling tasty cheese and breadcrumbs over the top and baking in a moderate oven for 20-30 minutes. Enjoy!
Simple no-cook pasta sauce
Ingredients
3 anchovies
1 tin diced tomatoes
Handful fresh parsley
Handful fresh mint
1 tsp fresh oregano
1 clove garlic, crushed
1/2 cup parmesan, grated
Method
Put a pot of water on to boil
Add all sauce ingredients to food processor and blitz for 30 seconds
Cook pasta of choice
Pour fresh sauce on top of the pasta
Sprinkle with fresh parmesan and season to taste!
